Hosting Christmas Breakfast | Quiche & Cocoa

We have a big family. By that I mean there are a lot of separate sides to the family. My husband and I each have divorced parents {like most of our generation} but our kids are lucky enough to have 4 sets of grandparents. Hooray! While that is delightful, it sometimes makes the Holidays even more difficult when you have to travel and see everyone. How do we solve this issue of complex traveling? This year I had the privilege of hosting Christmas at our house on Christmas Eve morning. My husband’s whole side joined us, for a total of 12 people and 4 toddlers. We opted to do our Christmas celebration in the morning since we had other families to travel to later in the day. This made the traditional Christmas Feast for this family into a Breakfast.

Obviously, as the host, there was pressure to put on a good showing as this was their big Christmas Feast. I chose Quiche because they are easy enough while still festive and pretty. I also loved the idea of making a variety so that everyone would be happy, or at least have an option. I also knew too, as a bonus, that my own kids would actually eat it!

The Quiche Buffet

I spent most of December practicing and perfecting Quiche Recipes to prepare for this Chrismas Breakfast. I certainly recommend doing the same if you’ve not yet made a recipe before. I definitely changed a few things and was glad I did test runs because I changed a lot of cook times and temperatures to avoid undercooked middles.

We went through a lot of trial, which Billy and the boys did not mind at all and settled on these final, delicious creations. I have written separate blog posts with their printable recipes too!

The Menu

The remaining Breakfast Menu had all sorts of goodies. My favorite was this Grape & Cheese Tree Tray. I just so happened to have the perfect tray, which is actually a cookie plate. We cubed 4 kinds of cheese and used red and green grapes. I then added springs of Dill because I thought it looked the most like mini fir tree 🙂

VEggie Medley Quiche Recipe. Printable Recipe and How to. Therefore, I have been putting myself through the ringer trying to nail down the perfect quiche recipes to serve. This one, Veggie Medley Quiche was so pretty nobody wanted to cut it! Not only is it oh so pretty, but also delicious! #MomWinning

Veggie Medley Quiche

PRINT THE RECIPE

Prep Time 25+ mins | Cook Time 60 mins | Serves 8

Ingredients:

  • Pie Crust
  • 3 Large Eggs
  • ½ Cup Half & Half
  • 1 Cups Ricotta Cheese
  • 1 Zucchini
  • 1 Eggplant
  • 1 Yellow Squash
  • 1 Red Bell Pepper

Instructions:

  1. Preheat oven to 400*F and prepare pie crust in a 9” pie plate. Set aside
  2. In a large bowl, beat eggs, Ricotta cheese and half & half until smooth.
  3. Using a Mandoline Slicer, slice your zucchini, eggplant, red pepper, and yellow squash into strips
  4. Pour egg/Ricotta mixture in the pie crust
  5. Use the veggies slices to circle your pie crust, starting on the outer edge, and working in, by standing them on edge.
  6. Cook 60 minutes or until your pie crust is golden brown and the middle doesn’t jiggle.
    1. This one takes a while to cook as all the veggies add a lot of liquid.
  7. Cool 10 minutes then serve!

I  got to use my Mandoline Slicer from our wedding, which is always a plus. I cut the veggies in half lengthwise first and then ran them over the Mandoline. I then further trimmed them to make them fit uniformly in the pie crust.

Start circling your veggie slices from the outer edge, working in so that they stand up. I then poured in the egg mix and filled in the gaps with more veggies.

Applewood Ham & Asparagus Quiche

PRINT THE RECIPE

Prep Time 15+ mins | Cook Time 50 mins | Serves 8

Ingredients:

  • Pie Crust
  • 4 Large Eggs
  • ½ Cup Half & Half
  • 2 Cups Mozzarella Cheese, Shredded
  • 1 Asparagus Bunch
  • 1 Deli Package Applewood Ham Sliced
  • Minced Garlic
  • Chopped Cherry Tomatoes {optional}

Instructions:

  1. Preheat oven to 375*F and prepare pie crust in a 9” pie plate. Set aside
  2. In a large bowl, beat eggs, Mozzarella cheese, and half & half until smooth. Mix in garlic, as desired
  3. Dice deli ham sliced into ½ inch squares {approx.} and add to egg mix, stir until blended
  4. Wash & chop Asparagus to size
  5. Pour egg/ham mixture in the pie crust
  6. Use the Asparagus to circle your pie crust and add tomatoes as desired
  7. Cook 40-45 minutes or until your pie crust is golden brown and the middle doesn’t jiggle.
  8. Cool 10 minutes then serve!

Zucchini Ricotta Quiche

PRINT THE RECIPE

Prep Time 15+ mins | Cook Time 50 mins | Serves 8

Ingredients:

  • Pie Crust
  • ½ Cup Milk
  • ½ Teaspoon Salt
  • ½ Yellow Onion, diced
  • 1 Cup Mozzarella Cheese, Shredded
  • 1 Cup Ricotta Cheese
  • 1 Tablespoon Olive Oil
  • 2 Zucchini, sliced thin
  • 4 Large Eggs
  • Minced Garlic

 

Instructions:

  1. Preheat oven to 400*F and prepare pie crust in a 9” pie plate. Set aside
  2. Heat oil in frying pan over medium heat and add onion. Cook until clear {5 Min} then add garlic and cook another minute or 2 until blended.
  3. Slice zucchini and add to frying pan and cook until soft, stirring often. Remove from heat, set aside.
  4. In a large bowl, beat eggs, Ricotta cheese, and milk until smooth. Stir in all spices and mozzarella cheese
  5. Spread fried onions and garlic mix in the prepared pie crust bottom. Set aside half the zucchini slices and put the rest in the bottom.
  6. Pour egg mixture over onions, garlic, and zucchini in the pie crust
  7. Use the remaining zucchini to ring the rim of your pie crust
  8. Cook 40-45 minutes or until your pie crust is golden brown and the middle doesn’t jiggle.
  9. Cool 10 minutes then serve!

Heart Pies {Toddlers in the Kitchen}

This was a truly fun and easy way to get Cash involved with making some Valentine’s Day Treats… since our Pudding Paint Heart Stamped Valentines didn’t work out {you’re shocked I know}

We were much more successful here with this super easy recipe I first saw pop across my Facebook feed actually. Which I quickly repinned from Frugal Coupon Living. I noticed, “Hey! I have that heart shaped cookie cutter!” Cash loves to cut Play-Doh so why not give it a try?

What you need:
Pie Crusts
Pie Filling
Cookie Cutter
1 Egg
1/2 Cup milk
Pastry brush
Parchment paper
Cookie Sheet
Surplus of cute sprinkles

Preheat your oven to 350 degrees

Step one: Lay out the dough on a rolling sheet and let your kiddo go to town cutting out hearts. Mash up and re-roll out the dough as many times as possible to get the most hearts. We got 8 hearts out of one crust. {You need an even number}

Step 2: Make your Egg Wash by mixing the 1 egg and 1/2 cup milk in a bowl and wisking it together.

Step 3: Line out the hearts on the parchment paper and “paint” the crusts with the egg wash, especially the edges. Then use a spoon to fill them with filling. I did this part to avoid the toddler mess. The egg wash helps the two crust layers stick together and not burn so much in the oven.
*Notice our Toddler cookie cutter misfires…. it’s totally cool, they’ll bake away!

Step 4: Cut a small X in another heart then place it over the pie filling. Use a fork to scrunch the edges together like a crimper 😉

Step 5: Let your Toddler “paint” the tops again. He or she will do great after they anxiously watched you do the first round and now want their turn!

Step 6: Deal out a few small bowls of sprinkles and let your Toddler(s) decorate galore!

Step 7: Bake for 12 minutes or until golden brown

Step 8: Enjoy or gift the adorableness that is a heart-shaped pie!
