Lavender Shortbread Cookies {Recipe}



One of my many amazing neighbors dropped off a little bundle
of lavender from her garden the other day…. Challenge accepted! There are many
awesome things you can do with lavender but for this post we’re focusing on
LAVENDER SHORTBREAD COOKIES! Perfect as a light bite for a shower, luncheon,
tea or just whatever

Ingredients:
1 cup butter
3/4 cup confectioners sugar
1 egg
1 tsp vanilla extract
2 1/4 cup flour
1/2 tsp salt
Lavender to taste (about 1 T+)

1/2 tsp Lemon extract

Directions:

Preheat to 300 degrees
Bake for 25 minutes

 1. Cream the butter/sugar

 2. I add in the lavender next do that it it mixed evenly and doesn’t get clumped up with the dry ingredients.

 

 3. Start folding in the flour, sugar, salt, etc until dough forms

 4. Clunk it out onto your mat (covers in a little flour) and hand-knead. Then roll it out evenly and roll it up.

 5. Wrap in wax paper and stick it in the freezer for a few hours (3 is good) so that it firms up enough to cut. It will be very soft from the kneading.

 6. Take out your frozen roll and cut into cookies. I place one side on a plate of sugar to give them some extra sparkle!

 Special note: the second time I did these I actually divided it into 3 rolls, then kept them in the freezer between batches. This prevented the dough from getting soft again. Above is what would happen: When cutting they would smoosh and I’d have to reshape them into circles…. went MUCH better if kept in freezer between!

 

 7. Line assemble your sugared cookies on your sheets and bake for 25 minutes at 300 degrees. Cool and serve! Makes about 4 dozen 1 inch cookies. {Based on how thin you cut them}
