Tonight’s dinner experiment was inspired by one of my husband’s favorite Oregon wines: Rascal. He likes it because their logo is man’s best friend. My mission was then to create a recipe that utilized the wine.

Here is what I came up with:

Rascal Chicken-
1/4 Cup Rascal Wine
2 Tbsp Olive Oil
Chicken thighs cut into strips
1/2 Red Potato medley
1 cup Edamame
1 Package McCormick’s Seasoning

Pre-heat your oven to 425 degrees
In a small bowl mix together wine, oil and seasoning packet

Cut your potatoes into quarters

Pour the seasoning mixture over your quartered potatoes and toss to evenly coat

Thaw your frozen chicken, clean, strip and add to bowl. Add in your 1 Cup of Edamame

Coat your pan with spray butter

Fill your pan and cover with foil. Bake for 45 minutes at 425 degrees

I served mine with my Sweet Kale salad and buttermilk biscuits. You may also drink the rest of your wine 🙂

 

It went over really well for dinner and passed the Husband test!
